In 2021, after becoming a single mom, Alex knew she wanted to be an at-home entrepreneur, fully present with her child. The idea for Zensicles dropped in, and she ran with it. However, as winter approached, it became clear that popsicles were out of season. Alex adapted by launching the first rural meal delivery service in her area, providing fresh homemade vegetarian meals three times a week. Zen Eats, the parent company, was born in the winter of 2022, with Zensicles continuing as a beloved summer treat.
When Alex was pregnant with her second child, she realized that cooking and delivering meals wasn’t sustainable. She needed a stationary venture that would allow her to balance her growing family and business. That’s when Om Taco was born in the summer of 2023.
Now, Alex operates Om Taco with her two little ones by her side, always ready for the next adventure. Her journey from Zensicles to Om Taco reflects her resilience and passion for bringing people together and providing wholesome vegetarian food to her community.
